Chocolate Chip Banana Bread Baked Oatmeal
Updated: Feb 7, 2020
Well, friends. It finally happened. We got snow in Denver. I'll admit we've been a little spoiled over here. The month of January produced very little measurable snow fall and the temps were mild and enjoyable. But apparently Colorado knows how to play catch up because February came in like a two-year old having a temper tantrum. Two snow days already this week. My goodness.
All that to say, I woke up to a winter wonderland and closed schools so why not whip up a hot, delicious batch of baked oatmeal. It's a family favorite around here. Rule of thumb: when you find something all the littles enjoy, you stick with it.

Baked Oatmeal in less than 10 minutes
This baked oatmeal has all the things you love about your Mom's classic banana bread--soft, slightly sweet, and nestled with chocolate in each bite with the bonus of some added protein and whole grains.
This literally took less than 10 minutes to put together (assuming you have some extra ripe bananas on hand) and filled with healthy, good for you ingredients like maple syrup, bananas, almond milk and greek yogurt.

How To Make Banana Bread Baked Oatmeal?
I love this baked oatmeal because it requires only 2 bowls and simple ingredients you probably have in the pantry. Start with mixing the dry ingredients together in one small bowl (rolled oats, baking powder, salt, cinnamon, and protein powder) and in a separate bowl mix mashed bananas, almond milk, egg, egg whites, greek yogurt and vanilla. Add dry ingredients to wet and mix until combined. Pour into 9X9 square baking dish and top with chocolate chips. Bake at 375 for 40min.
And feel free to get creative with the mix-ins. You can easliy add walnuts, pecans, or raisins to the batter to bring this baby to life!
