These gluten free cookies won’t last long in your home—melt in your mouth chocolate at only 85 calories and naturally gluten free!

These Double Fudge Snowball Cookies are so unassuming. They don't look like much but trust me when I say this– they are FANTASTIC!!

They are so easy to pull together, naturally gluten free (total win for those who are looking for a celiac-friendly cookie), and are super fun to do with any kiddos in your house. Mine absolutely LOVE rolling the cookies in the powdered sugar.

If there was ever a "healthy-ish" double chocolate cookie...this might be it!

Double Fudge Snowball Cookies

Makes 12 cookies

Dry Ingredients:

2c powdered sugar (plus more for rolling)

1/2c unsweetened cocoa powder

1/2 tsp baking soda

1 TBS corn starch (or arrowroot powder)

1/4tsp salt

Wet Ingredients:

9 oz (1 1/2c bittersweet chocolate)

3 egg whites (from real eggs)*

Directions:

Preheat oven to 350 and line 1 or 2 baking sheets with parchment paper.

1. Melt 1 cup chocolate chips in microwave safe bowl, stirring frequently for approximately 2 min. Set aside and let cool.

2. Using a stand mixer, beat egg whites in large bowl until soft peaks (approximately 4-5min.) Gradually beat in 1 cup powdered sugar (slowly or it will go everywhere!) Continue beating until mixture starts to resemble marshmallow cream.

3. Whisk together 1 cup powdered sugar, cocoa powder, corn starch and salt in bowl. On low speed, gradually add these ingredients to the marshmallow cream.

4. Next, add remaining 1/2c chocolate chips to cooled melted chocolate. Add chocolate mixture to cream mixture and blend well. Batter will become very stiff. Don't worry--you're doing it right.

5. Roll 1 rounded tablespoon of dough into powdered sugar, coating well. Place on prepared lined baking sheet. Repeat with remaining dough.

6. Bake until puffed and tops begin to crack, about 9-10 minutes. Cool on sheet before transferring to cooling rack.

7. Enjoy! Keep in airtight container for up to 3 days (if they last that long!)
